Microgreen Pesto


• 2 cups of microgreens
• 1 cup of basil
• 1 clove of garlic, crushed
• 1/2 lemon squeezed
• 1/4 roasted pine nuts or walnuts
• 1/2 cup of olive oil
• Salt, pepper 

• 1/3 cup parmesan cheese


  1. In a blender, add the microgreens, basil, garlic, and lemon juice. 
  2. Slowly add olive oil and blend.
  3. Adjust flavours – add salt, pepper, olive oil and more lemon juice to reach the consistency and taste you desire.
  4. Add parmesan and pulse until fully mixed.
  5. Enjoy immediately or store in an airtight, container in the fridge for up to 5 days.
