• 2 cups of microgreens
• 1 cup of basil
• 1 clove of garlic, crushed
• 1/2 lemon squeezed
• 1/4 roasted pine nuts or walnuts
• 1/2 cup of olive oil
• Salt, pepper
• 1/3 cup parmesan cheese
- In a blender, add the microgreens, basil, garlic, and lemon juice.
- Slowly add olive oil and blend.
- Adjust flavours – add salt, pepper, olive oil and more lemon juice to reach the consistency and taste you desire.
- Add parmesan and pulse until fully mixed.
- Enjoy immediately or store in an airtight, container in the fridge for up to 5 days.
