Acai Fruit Bowl with Cantaloupe Microgreens

Ingredients:

  • 1 cup frozen acai puree, slightly thawed
  • 1/4 cup pineapple
  • 1 cup frozen mixed berries
  • 1/4 cup plain low fat greek yogurt
  • 1/4 cup almond milk
  • 1 tablespoon honey
  • Fresh Fruit
  • Cantaloupe Microgreens

Instructions:

  1. Add the acai, pineapple, berries, yogurt, almond milk and honey to the pitcher of a high speed blender.
  2. Puree until smooth.
  3. Divide the mixture among three bowls and top with fruit and cantaloupe microgreens.  

*Optional topping additions:

  • granola
  • nuts
  • coconut flakes
  • nuts
